This easy and classic homemade red cabbage recipe is seasoned with blackcurrant juice and warm spices. It is the perfect side dish for both duck roast, pork roast, medister sausage and meatballs. Make a large batch while you're at it. Any leftover red cabbage can be frozen.

Ingredients

small red cabbage, about 1 kg
40 g
butter
1 dl
bay vinegar
2 dl
concentrated blackcurrant juice
3 tbsp
sugar
3
bay leaves
1
cinnamon stick
3
star anise
Salt and pepper
Avoid screen shutting off

Instructions

Step 1/5
Remove the outermost cabbage leaves and discard them. Coarsely chop the rest of the red cabbage.

Melt the butter in a large pot, add the red cabbage, and let it cook over medium heat until it begins to soften.
Step 3/5
Add bay vinegar, blackcurrant juice, sugar, bay leaves, cinnamon stick and star anise, cover the pot, and let it simmer gently and slowly for 10 minutes.
Step 4/5
Remove the lid from the pot, and let the cabbage simmer further for approximately 20 minutes with regular stirring, until most of the liquid has evaporated.
Step 5/5
Adjust the taste if needed with extra vinegar or sugar, and season to taste with salt and pepper.
