A frittata is the Italians' answer to our omelette. It is often filled with different ingredients – typically including potatoes. This version also features plenty of fresh herbs, spring onions and goat cheese as well as fresh cherry tomatoes. Enjoy it as is, or together with a good salad and good rye bread. By the way, it also tastes wonderful cold the next day.

Ingredients

300 g
cooked potatoes
1 bunch
fresh herbs, such as parsley, basil, oregano and chervil
1 bunch
spring onions
1 clove
garlic
200 g
cherry tomatoes
Olive oil
6
eggs
1 dl
milk
100 g
goat cheese
Salt and pepper
Avoid screen shutting off

Instructions

Step 1/5
Cut the potatoes into rough cubes, slice the spring onions, and pick and chop the herbs. Peel and chop the garlic. Halve the cherry tomatoes.
Step 2/5
Sauté the spring onions and garlic in oil in a pan for 1-2 minutes. Add the potatoes and herbs (save some for garnish).
Step 3/5
Whisk the eggs lightly with milk, salt and pepper, and pour into the pan.
Step 4/5
Distribute the goat cheese on top in small pieces, and place the pan in a 180 degree convection oven for approximately 20-25 minutes, until it is firm and golden.
Step 5/5
Top with the halved cherry tomatoes and herbs when serving.
