Perfect meal for one, when it needs to be both nourishing and filling, while also being quick. This omelet is made with both semi-sun-dried tomatoes, grated cheese and fresh herbs to really turn up the flavor.
Enjoy it as is, or together with butter-toasted rye bread or simply a good salad with vinaigrette.

grated hard cheese, e.g. parmesan

semi-sun-dried tomatoes

fresh herbs for garnish, e.g. watercress, chervil and cress

Instructions
Step 1/5
Whisk the eggs together with milk, salt and pepper.

Melt the butter in a pan, and pour the egg mixture into it.

Stir until it begins to set, then sprinkle with grated cheese and the semi-sun-dried tomatoes (save some for garnish).

Roll the omelet together, arrange it on a plate, and garnish with extra semi-sun-dried tomatoes, grated cheese and fresh herbs.

Enjoy optionally with butter-toasted rye bread.
