Meet Thorsten Schmidt

Thorsten Schmidt, former head chef and owner of Malling & Schmidt in Aarhus, is now the driving force behind the Barr restaurant in Copenhagen. Having grown up on both sides of the Danish–German border, he explores the simple yet delicious dishes of his childhood and brings Northern European culinary traditions back to life in his kitchen.
