Ingredients

scampi
5 cloves
garlic
1 handful
parsley
150 g
butter
Oil for frying
Salt and pepper

Instructions

Step 1/5
Split the scampi lengthwise and remove the intestinal vein.
Step 2/5
Peel and mince garlic, and pick and chop parsley.
Step 3/5
Melt the butter in a saucepan, add garlic, and remove the pan from heat. Season with salt and pepper, and stir in parsley.
Step 4/5
Fry the scampi with the meat side down in oil over high heat for 30-60 seconds depending on size. Turn the scampi and fry for another 30-60 seconds.
Step 5/5
Pour garlic butter over and serve immediately.
