Pies are the ultimate comfort food when the calendar says winter. Here we have beef in cubes and carrots in a lovely sauce made with red wine, stock, tomato paste and herbs. Feel free to use a meat cut such as chuck or neck, which are particularly good in braising dishes.
If you have small oven-safe bowls, it looks nice with individual pot pies. However, you can also use a large oven-safe dish and make one large pie instead.
Enjoy your pot pies with mashed potatoes or roasted potatoes and steamed vegetables.

Instructions
Step 1/13
Peel and chop onion and garlic.
Step 2/13
Brown the meat in oil in a pot, and set it aside.
Step 3/13
Sauté onion and garlic in the same pot until the onions are clear.

Return the meat to the pot together with red wine, beef stock, Worcestershire sauce, tomato paste, thyme and bay leaves.

Bring the pot to a boil, and let it simmer covered for one hour.
Step 6/13
In the meantime, peel the carrots, and cut them into large pieces.

Add them to the pot, and let it simmer further for approx. 30 minutes, until the meat is tender.

Thicken with cornstarch mixed with water, and season with salt and pepper.

Cool to room temperature.

Add the cooled filling to small oven-safe bowls.

Roll out the puff pastry, and cut it out so it fits the bowls. Make a small hole in the middle so the steam can escape.

Carefully place the pastry over the filling, and press together at the edges.

Brush with beaten egg, and place the small pies in the oven at 180 degrees fan/200 degrees conventional for approx. 25-30 minutes, until they are crispy and golden.
