A Parisian beef is a Danish lunch classic that is still a hit today. The combination of crispy bread, juicy ground beef and accompaniments that provide both acidity and sweetness can bring a smile to most faces. The pickled beets have been replaced here with pickled red onions and fresh beets in strips.

Instructions
Step 1/7
Remove the crust from the bread.
Step 2/7
Form the meat mixture into four flat patties, shape them around the bread so the meat extends slightly over the edges.

Season with salt and pepper.
Step 4/7
Fry the Parisian beef patties in butter and oil for 2-3 minutes on the bread side. Turn them over and fry for an additional 5-6 minutes on the meat side.

Peel and chop the shallots, and grate the beets and horseradish.
Step 6/7
Arrange the Parisian beef patties on plates and distribute the accompaniments around them.
Step 7/7
Finally, top each patty with an egg yolk.
