Simple and delicious, but packed with flavors from warmer climates. The chicken here is marinated in a wonderful blend of spices rooted in Mexican cuisine. If time allows, you can advantageously let the chicken marinate in the mixture for an hour or longer.
The chicken is accompanied by a fresh and spicy mango salsa with spring onions and cilantro. It also tastes great with a pile of sweet potato fries on the side.

Instructions
Divide the chicken legs at the joints.
Step 1/2
Mix oil with all the dry spices, and rub the mixture onto the chicken. Place the chicken in an oven-safe dish, and put it in the oven at 180 degrees fan/200 degrees regular oven for approximately 40-45 minutes, until the chicken is cooked through.

Mango Salsa
Step 1/5
Cut the peel off the mango, and cut it into small cubes.
Step 2/5
Halve the cucumber lengthwise, and scrape out the seeds. Cut it into small cubes.

Chop the chili – discard the seeds if desired.
Step 4/5
Finely chop the spring onions, and chop the cilantro.
Step 5/5
Put everything in a bowl together with olive oil, and season with lime juice, salt and pepper.
