Lamb is on the dinner table for most people at Easter. But if you're lacking inspiration, here you'll find a delicious and easy recipe for lamb crown with crispy ramson crust.
Enjoy the lamb crowns with a green salad and good bread or together with your favorite potatoes.
NOTE: If you can't find ramsons, you can replace them with, for example, broad-leaved parsley or a mix of different herbs.

Ingredients
3 dl panko breadcrumbs
50 g wild garlic leaves
2 trimmed lamb racks
Butter for frying
2 tbsp honey
1 tbsp Dijon mustard
Salt and pepper

Instructions
Step 1/7
Preheat the oven to 210 degrees conventional/190 degrees fan.
Step 2/7
Spread the breadcrumbs on a baking sheet with baking paper, and toast them golden in the oven. Keep a close eye so they don't burn.
Step 3/7
Chop the wild garlic leaves, and blend them with the toasted breadcrumbs, salt and pepper.
Step 4/7
Score the fat on the lamb racks, and brown them in butter in a pan. Pour the melted butter over the lamb racks while cooking, and turn them halfway through so they get a nice crust on both the meat and fat sides. Season with salt and pepper.
Step 5/7
Finish cooking the lamb racks in the oven for approximately 10 minutes, until the internal temperature reaches 56-58 degrees for medium-rare.
Step 6/7
Let them rest for 15 minutes.
Step 7/7
Mix mustard and honey, and brush the mixture onto the tops of the lamb racks. Dip the brushed side in the wild garlic mixture.
